kumbalkai gargi



Gaargi is a dessert that we used to make and I am sure it has some other names in other cultures. It
looks like a reddish brown doughnut. And it is made of pumpkin (red/orange ones). Try it – its too yummy!

Ingredients:

Wheat flour, grated red pumpkin, jaggery, cardamom powder, poppy seeds and oil.

Process:

Cook  the grated pumpkin without adding any water, in a pressure cooker, for 2 – 3 min after attaining maximum pressure.
Transfer it to a vessel, add jaggery to taste and a pinch of salt.
Mix thoroughly with hand.
Add wheat flour in small portions  to help to properly prepare a dough of semisolid consistency.
A test portion when put in water should float.
Take a small portion of ball shaped dough and make it in a shape of a donut. You can put the dough on the left palm that is greased with a little ghee, make it  flat and then make a hole in the centre (like uddin wada or donut).
Deep fry in hot oil till golden brown.
Serve them warm.
